HOMEMADE ICE CREAM SANDWICHES
Summer is by far my favorite season of the year. While I can always find something to love about every season, something about the warm air, the smell of sunscreen, and sun kissed skin after a long day brings me right back to childhood. I decided to run with that idea by recreating one of my favorite childhood treats that you can make right at home. These are perfect for cooling off after a long day of playing in the sun and would be adorably festive at your next summer get together.
HOMEMADE ICE CREAM SANDWICH
Ingredients:
COOKIES (PICK YOUR FAVORITE!)
ICE CREAM
SPRINKLES
Grab your favorite cookie. I'm using soft baked chocolate chip.
Pile on a big scoop of ice cream, big being the operative word here. Go crazy.
Add a second cookie on top of the ice cream and then use a spoon to smooth out the edges.
Roll the edges in some sprinkles, or more chocolate chips, or coconut flakes, or whatever you love! I'm using red, white and blue sprinkles for a festive 4th of July touch. Enjoy them right away or pop them in the freezer to let them harden up a bit. All that's left to do is take a big bite!
